Making Chickens do the Chicken Dance

So the one thing I miss about living in the south is the food. I just can't seem to find good southern food here in Colorado. The two things I've missed the most are shrimp and grits and good fried chicken. So I took matters into my own hands.

About a week ago I made an pretty decent shrimp and grits considering it is also impossible to find tasso here with out paying an arm and a leg for it. So I substituted chorizo for the tasso added the shrimp and tomato and there you go. Put it on top of some buttered grits and you have one delicious meal. This is probably what I consider my comfort meal. The go to dish, for when I need a little lift in spirit.

Now for the fried chicken... since there are so many ways to execute fried chicken its not hard to find but it is just not the same as in the south. My favorite is buttermilk fried chicken topped with honey. So I decided to share with work and run it as a special one night. I served it with mashed potatoes and grilled corn on the cob. A little down home cooking for what was a pretty nasty day outside. And for some reason, the servers at my job just don't seem to know how to sell specials. Whenever I do decide to run one I'm lucky if they sell one. But on on this particular day, I was lucky enough for them to sell two. It may be a little sad but I was quite proud of them.

Now for the title, it may prove that I am some what crazy but who that works in a kitchen isn't? It is one of my favorite stories from school. It was finals day of meat cutting and our assignment was to break down two whole chickens. Well I had some extra time between the two so I start making my chicken do the chicken dance and quietly singing along. My teacher just gives me this look of "what in the hell are you doing?" So I promptly get back to work. But still to this day I can't break down whole chickens without making at least one of them dance.

Who Killed the Easter Bunny

It's always fun to get together with friends and family around the holidays and enjoy a great dinner. Easter dinner has always been one of my favorites, even though it was a few days ago. There is just something about sitting down after that very competative egg hunt (yes even though there are no "kids" left in my family we still do an egg hunt) to a great meal. It seems tradition for lamb or ham to be served on Easter, but me having a morbid sense of humor it felt right for a delicious rabbit dish this year. Good thing there are no kids around I don't think they would appreciate eating the Easter bunny.
Nothing like a beer braised rabbit to get you through the day. And of course it is imperative to "taste" the beer you are cooking with, for quality purposes of course. So we went with a Guinness Rabbit with orzo and fresh green beans.
Break down one rabbit season with S&P and cayenne. In a heavy pot or dutch oven sear the peices in oil until golden brown. Remove from pot, add mirepoix and garlic cloves, saute until soft. Deglaze with guinness, add chicken stock and reduce. Return rabbit to the pot, add bay leaves. Cover tight and put in a 300 degree oven for about 1 1/2 hours. Once tender and cooked thouroughly remove rabbit from the pot and strain the jus to use for a sauce. Serve with your choice of sides.
So its nothing to difficult as long as you keep any kids from finding out you eat the Easter Bunny.

New Post New Me

So it has been a while since I have used blogspot but I'm going to try and update regularly. This time I am going to post more about food and what I am doing in my job/ cooking at home. Not a lot has been going on recently just working for Hyatt as the culinary supervisor, in Denver, Colorado. I get to use some of my creativity to create specials every night such as the southern shrimp and grits we did last night. We are also working on a new menu focused around local brews so that should be fun to work on here soon. Any feed back I can get would be great for that. I am also working on some cakes for some weddings and birthdays coming up here soon, I'll have pictures up as soon as I can. So I know this post is boring and all but new stuff to come I promise...
