So the one thing I miss about living in the south is the food. I just can't seem to find good southern food here in Colorado. The two things I've missed the most are shrimp and grits and good fried chicken. So I took matters into my own hands.
About a week ago I made an pretty decent shrimp and grits considering it is also impossible to find tasso here with out paying an arm and a leg for it. So I substituted chorizo for the tasso added the shrimp and tomato and there you go. Put it on top of some buttered grits and you have one delicious meal. This is probably what I consider my comfort meal. The go to dish, for when I need a little lift in spirit.
Now for the fried chicken... since there are so many ways to execute fried chicken its not hard to find but it is just not the same as in the south. My favorite is buttermilk fried chicken topped with honey. So I decided to share with work and run it as a special one night. I served it with mashed potatoes and grilled corn on the cob. A little down home cooking for what was a pretty nasty day outside. And for some reason, the servers at my job just don't seem to know how to sell specials. Whenever I do decide to run one I'm lucky if they sell one. But on on this particular day, I was lucky enough for them to sell two. It may be a little sad but I was quite proud of them.
Now for the title, it may prove that I am some what crazy but who that works in a kitchen isn't? It is one of my favorite stories from school. It was finals day of meat cutting and our assignment was to break down two whole chickens. Well I had some extra time between the two so I start making my chicken do the chicken dance and quietly singing along. My teacher just gives me this look of "what in the hell are you doing?" So I promptly get back to work. But still to this day I can't break down whole chickens without making at least one of them dance.
